A family-run business, the Snowdonia Cheese Company is run by the sons of third-generation dairy farmers and have creamy, smooth flavours that will leave you wanting more.

 

The company are inspired by their enchanting surroundings in North Wales, with lush greenery encompassing them and the convenience of the fresh ingredients nearby which allows them to craft natural, premium cheeses.

4 ways to get ready for BBQs, picnics & summer nights

With Monday 21st June marking the Summer Solstice and the first official day of summer, it’s time to start getting ready for the season of picnic lunches, family get-togethers and lazy days relaxing in the garden.

Here are four ways that you can be summer-ready:

This time of year, the sun loungers come out, the BBQ gets dusted off, and the garden gets an all-round tidy up to get it in tip-top shape for family, friends and your enjoyment. Although this can be a lot of work, there are simple things you can do to make your garden a summer haven without too much fuss.

Perfect your lawn

First, start by tidying up your lawn and getting rid of those patches where the grass no longer grows. Sprinkle some topsoil onto the areas where the soil is poor and then use sowing grass seeds. This will revitalise your grass and you’ll start to see improvements within 5-30 days.

Stock up on kindling

Even though it stays lighter later in summer, the evenings are not always warm and it’s nice to sit by an outdoor log burner or small fire pit. Dry kindling sticks are great for open fires but are a super multi-use item as it can also be used for BBQs, and provide your fire with a roaring start. Alternatively, keep warm with smokeless coal, which can also be used for open fires and small multi-fuel stoves. For a more traditional option, you can’t go wrong with logs, which provide a lovely aroma in the cool evenings. A fire is also a good way to keep bugs away that might come out at night and disturb your evening.

Don’t forget, while you’re making your garden inviting for your friends and family, don’t forget to leave something out for the regular visitors to your garden, the ones who truly appreciate your efforts… the birds! Wild bird food is great for bird tables and hanging feeders, while bird peanuts are perfect all year round and good for hanging feeders also.

Once you’ve made sure that your garden is ready for guests, it’s time to stock the cupboards, because spur-of-the-moment family BBQs, friends turning up unannounced or little ones wanting a picnic in the sun, is not uncommon at this time of year. Who wants to stay indoors when the sun is shining? So, there are a few things you can do to ensure you’re not panicking when it comes to food and drink.

Be ready for an impromptu picnic

It’s good to have some staples on hand such as wholemeal or white rolls and bread, which can be frozen for approx. 3 months and brought out when needed (you can find a tip on how to quickly defrost bread here). For sandwich fillings, you can’t go wrong with a delicious cheese of your choice, then all you need is a selection of savoury and sweet snacks to create a tasty spread. Flapjacks, caramel slices, and cookies are delicious sweet treats to tuck into, while cheese straws are good savoury choices. As long as they are properly stored, most of these items can last 3-5 days once open, meaning any leftovers won’t go to waste.

Lots of cold drinks on hand

You can never be too prepared for the hot days, and keeping a fridge full of ice-cold drinks to quench your thirst and keep you hydrated is essential. A good supply of still or sparkling water, fruit juices such as apple, orange and cranberry, or fizzy drinks, allows you to easily plan for last-minute get-togethers. Quickly make a garden party mocktail using a few ice cubes and equal parts orange juice, cranberry juice and lemonade, for a refreshing drink your guests will love. Top it off with a wedge or orange if you have any in the house.

It’s a hotly debated topic in many households, and with National Biscuit Day coming up on 29th May, the question comes up once again… what is the best biscuit? However, you’ll be pleased to know – though maybe less so if your favourite isn’t in the top 5 – there is actually a winner according to a poll of 2,000 Brits.

In honour of National Biscuit Day, here are some recipes for you to make your own biscuits at home, and enjoy a good old dunk in your brew.

Jammie dodger

Ingredients

100g unsalted butter, softened
175g caster sugar, plus extra for sprinkling
large egg
1 tsp vanilla paste
200g plain flour, plus extra for dusting
370ml jar strawberry jam

Method

  1. To make the biscuits, mix the butter and sugar in a bowl with a wooden spoon until well combined. Add the egg and vanilla, and continue to beat by hand until fully incorporated. You will need to scrape the edges of the bowl down for this part.
  2. Tip the flour into the mixture and fold together until fully combined, then shape into a ball. Roll the dough out onto a floured sheet of baking parchment to a depth of around 5mm. Transfer the sheet to a baking tray and put in the fridge for 10 mins to firm up.
  3. Remove from the fridge and press out your biscuits using a 6cm flower-shaped cutter (you could use any shaped cutters to make these). You will need 16 base biscuits and 16 top biscuits, with small holes or hearts of around 3cm cut out of them.
  4. Recombine your dough off-cuts and reroll them on a floured surface. Try to be fairly quick doing this, as the mixture will warm up and get sticky. If it does, just pop it back in the fridge to firm up again.
  5. Once the shapes are cut out, arrange on 2 baking sheets lined with baking parchment and leave to cool in the fridge for 10 mins.
  6. Heat oven to 190°C/170°C fan/Gas Mark 5. Bake the biscuits for 7 mins, then take them out of the oven and sprinkle the tops with caster sugar. Return all the biscuits to the oven and cook for a further 5 mins.
  7. Take out and allow to cool fully on a wire rack. When cool, spread jam on the bottom biscuit and top with another biscuit, sandwiching them together.

Did you know? These biscuits will keep for 2-3 days in an airtight container.

Shortbread stars

Ingredients

150g plain flour
100g salted butter
50g vanilla sugar

For the vanilla sugar
1 vanilla pod
225g caster sugar

Method

  1. To make the vanilla sugar, whizz the vanilla pod and sugar in a blender. Pour through a sieve and blend again. Store in an airtight jar.
  2. Pre-heat the oven to 180°C/160°C fan/Gas Mark 4. Place the flour and butter in a bowl and rub together to form crumbs. Add the vanilla sugar and mix to form a dough. Roll out the dough. Using a star-shaped cutter, cut out stars and place on a baking tray lined with non-stick baking paper.
  3. Bake for 8-10 minutes until just golden. Sprinkle with vanilla sugar. Leave to cool.

Gingernut biscuits

Ingredients

  • 100g salted butter, cubed
  • 75g light brown soft sugar
  • 1 tbsp grated fresh ginger
  • 100g golden syrup
  • 250g self-raising flour
  • 1½ tbsp ground ginger
  • 1 tsp bicarbonate of soda
  • small egg yolk, beaten

Method

  1. Pre-heat the oven to 190°C/170°C fan/Gas Mark 5. Line two large baking trays with baking parchment. In a saucepan over a low heat, melt the butter, sugar, fresh ginger and golden syrup and leave to cool.
  2. Mix the flour, ground ginger and bicarbonate of soda in a bowl with a wooden spoon. Gradually stir in the cooled sugar mixture and the egg yolk and knead briefly to make a dough.
  3. Roll the dough into 20g balls and put on the prepared baking trays with 3cm between each to allow for spreading. Bake for 8-10 mins until golden brown. Leave to cool on the trays for a min, then transfer to a cooling rack to cool completely.

Carrot & Sweet Potato Puree

Rich, indulgent and smooth – this puree tastes like sweet heaven and makes carrots feel that bit more special. It’s also great warmed through the next day with cold cuts and leftover nibbles plus, it freezes well for a weekend treat!

  • 900g sweet potatoes
  • 450g carrots
  • 600ml water
  • 1 tbsp sugar
  • 170g butter
  • 220g crème fraiche
  • ½ tsp fresh nutmeg
  • Pinch of cayenne pepper
  • Seasoning

Scrub and prick the potatoes before cooking in the middle of the oven on a high heat for around one hour (or until fork tender). Meanwhile, peel and chop the carrots and add to a pan with the water, sugar, a knob of butter and seasoning. Bring to the boil then reduce and cook uncovered for 30 minutes or until tender and the water has mostly evaporated. Do add more water if necessary. Now combine the carrots, flesh from the cooked sweet potatoes, butter and crème fraiche in a blender, a blitz until creamy smooth. Add the nutmeg, optional cayenne pepper and season well to taste. Serve warmed through and enjoy!

Baked Parsnip & Celeriac

Fancy up your parsnips and pair with subtle celeriac for a crisp and nutty side that’s bursting with flavour! Make and freeze the filling up to a month before, defrosting in the fridge overnight before topping with the breadcrumbs.

  • 600g parsnips
  • 1kg large celeriac
  • 30g butter
  • 100ml double cream
  • 1 tsp wholegrain mustard
  • Handful of fresh sage leaves
  • Grating of nutmeg
  • 80g breadcrumbs
  • 60g grated parmesan
  • Optional sprinkle of caraway seeds
  • Handful of flaked almonds
  • Glug of olive oil
  • Chopped fresh parsley

Peel and slice the parsnips into cubes or chunks of equal size remembering to remove the woody core. Prepare the celeriac by peeling and cubing in the same way, then add the vegetables to a pan of boiling salted water for 10 minutes.  Drain then mash with the butter and cream adding seasoning, herbs and a grating of nutmeg to taste. Spoon into an ovenproof dish. Mix together the breadcrumbs, parmesan, almonds and caraway seeds in a bowl then sprinkle over the mash, adding a glug of olive oil across the top. Bake for 30-40 minutes until crisp and golden. Sprinkle with fresh parsley to serve.

Roasted Winter Squash & Jerusalem Artichokes

Sweet, nutty and earthy – Jerusalem artichokes are a real festive treat thanks to their delicious hearty flavour. Imagine crossing a globe artichoke with the best roast potato you’ve ever eaten! Roast with sweet squash and fragrant herbs for a great veggie side dish!

  • 800g Jerusalem artichokes
  • 600g butternut or winter squash
  • 1 bulb of garlic
  • 1 tbsp fresh or dried rosemary
  • 1 tbsp fresh or dried thyme
  • 3 tbsp oil
  • Scattering of sesame seeds
  • Seasoning

Start by peeling your artichokes or if you prefer the earthy taste, soak and then scrub the skins to remove any dirt. Halve or quarter the larger chokes then throw into a roasting tin. Prepare your squash in the same way, removing the seeds and cutting into wedges or chunks. Slice your garlic bulb, nestling between your veggies then toss with oil, thyme, rosemary and seasoning. Roast in the oven on a medium-high heat until knife tender and crisp on the outside, and the sweet garlic slides out of the skin. Dish into a large bowl before squeezing over half a lemon and a scattering of sesame seeds for crunch.

Overwhelmed by the choice of milk at Foulgers Dairy? Our online shop has exploded with milk and milk alternative options over the past few years! Back in the day, you had just a few types of milk to choose from, whole milk, skim milk, and perhaps soya. Today, though? As more and more people ditch dairy for a plant-based diet, there’s a plethora of options!

At Foulgers Dairy, we’ll always be just that, a dairy! But if you’re looking beyond cow’s milk for health reasons or dietary preferences or simply want to experiment with different options, we stock a range of different options to cater for our customers.

1. COW’S MILK

At Foulgers Dairy, we stock skimmed milk, semi-skimmed milk, whole milk and homogenised milk.

Fat-free skim milk was all the rage in the ’90s, when low-fat diets were king. However, in 2020 we appreciate that fat isn’t so bad after all, and studies actually show that fat increases satiety.

Cow’s milk is the most common consumed dairy milk and a good source of high-quality protein, too!

It’s naturally rich in calcium, B vitamins, and many minerals. It’s also often fortified with vitamins A and D, making it a very nutritious food for both children and adults.

2. LACTOSE-FREE MILK

Naturally, lactose-free dairy products are a great option for people who are lactose-intolerant. Lactose is a type of sugar found in milk products that can be difficult for some people to digest.

Food manufacturers produce lactose-free milk by adding lactase to regular cow’s milk. We stock Arla lactose-free whole milk, semi skimmed milk and skimmed milk, Arla carefully remove the niggling lactose, leaving the wholesome dairy flavours intact. Delicious!

3. SOYA

A rich source of protein and carbohydrates, soy milk is the plant-based alternative most comparable to cow’s milk. It’s just lower in saturated fat and doesn’t contain calcium, though it’s often fortified.

The subtle sweet taste of Aplro Soy Milk is a carefully selected blend of superior grade soya beans which they mill to create a true Original. We also stock Alpro Soya Milk Unsweetened, still the pure taste of soya and 100% plant-based, but unsweetened.

4. GOATS’ MILK

Is bird food quality important when feeding?

Absolutely! It’s essential that the seeds you offer are of the highest quality and cleanliness. Much like their human counterparts, birds won’t want to tuck into stale seed that has been in a bag or on a shelf for months on end. Yuck!

What’s in a high-quality bird seed mix?

High-quality seed mixes will contain a good percentage of nutritious, high-oil seeds like black sunflower seeds, sunflower hearts, peanuts, peanut granules, oil seed rape and niger seed.

Types of Bird Food

The bird food that you offer will by some extent be determined by the feeder you have. For example, sunflower seeds and seed mixes are most commonly offered in a hanging tube feeder.

Jamie Oliver’s carrots with garlic yoghurt

Roasting brings out the gorgeous, sticky sweetness of carrots, which the garlic yoghurt counters nicely in this dish. It’s super easy and serves 6 as a side – Jamie Oliver’s recipe is a great way to serve fresh carrots on the big day.
Ingredients:

  • 750g small to medium carrots
  • 1 bulb of garlic
  • 1 tsp coriander seeds
  • 1 tbsp sherry vinegar or red wine vinegar
  • 2 tbsp olive oil
  • 300ml thick Greek-style yogurt

Preparation:

Step 1 – Preheat the oven to 200ºC/gas 6 and halve the carrots lengthways, then separate and bash the garlic cloves, leaving their skins on.

Step 2- Place on a large baking tray. Lightly crush and add the coriander seeds, and drizzle over the vinegar and oil. Toss the carrots and garlic to coat, then season with sea salt and black pepper.

Step 3 – Roast in the oven for 45 minutes, or until the carrots are tender and caramelised in places but still have some bite. Remove the garlic as it caramelises or if it looks like it’s burning.

Step 4 – Squeeze the garlic flesh from the skins and mash well. Mix through the yoghurt then serve in a bowl next to the roasted carrots.

 


Hairy Biker’s roast parsnips recipe

These are a real favourite at Foulgers Dairy, and an essential part of roast dinner tradition. The Hairy Bikers roasted parsnips are one of the most delicious sides to add to your Christmas Day feast this year.

Serving 10 people, these Brussels are a must-have.

Ingredients:

1kg parsnips
2 tbsp goose fat or vegetable oil
Lots of cracked black pepper and a sprinkling of sea salt
2 tbsp honey or maple syrup

Preparation:

Step 1 – Preheat the oven to 180°C/Gas 4. Peel and cut the parsnips into chunks. We tend to cut off the pointy end and then cut the stouter top into pieces roughly the same size so they roast evenly. Heat the oil or goose fat in a roasting tin until smoking.

Step 2 – Toss the parsnip pieces in the hot fat or oil until they are nicely coated, then sprinkle with the black pepper and sea salt. Place them in the oven and roast for about 45 minutes or until cooked and starting to turn golden. The exact cooking time will depend on how big you cut the chunks, so keep an eye on them.

Stage 3 – Add the honey or maple syrup and roll the parsnips in the sticky juices. Return


Nigella Lawson’s perfect roast potatoes

If your tasty turkey is the star of the show, then that makes your roast potatoes a remarkable runner-up. The ratio of crunchy outside to fluffy interior is a feat that we all hope to replicate on the big day, and thanks to this recipe from Nigella, it’s within your grasp

This will serve 10 – 16 as part of the Christmas Day feast.
Ingredients:

  • 640g goose fat
  • 2 ½ kg potatoes
  • 2 tbsp semolina

Preparation:

Step 1 – Preheat the oven to 250°C/230°C Fan/gas mark 9/500°F.

Step 2 – Put the fat into a large roasting tin and then into the oven to heat up, and get incredibly hot. 20–30 minutes should do it.

Step 3 – Peel the potatoes, and cut each one into 3 by cutting off each end at a slant so that you are left with a wedge or triangle in the middle.

Step 4 – Put the potatoes into salted, cold water in a saucepan, and bring to a boil, letting them cook for 4 minutes.

Step 5 – Drain the potatoes in a colander, then tip them back into the empty, dry saucepan, and sprinkle the semolina over.

Step 6 – Shake the potatoes around to coat them well and, with the lid clamped on, give the pan a good rotate and the potatoes a proper bashing so that their edges fuzz and blur a little: this facilitates the crunch effect later. I leave them to rest at this stage. If you don’t, you’ll need to have preheated the oven earlier!

Step 7 – When the fat is as hot as it can be, tip the semolina-coated potatoes carefully into it (they splutter terrifically as you put them in) and roast in the oven for an hour or until they are darkly golden and crispy, turning them over halfway through cooking.

Step 8 – If the oven’s hot enough, they may well not need more than about 25 minutes a side; but it’s better to let them sit in the oven (you can always pour off most of the fat) till the very last minute.


Don’t forget the bread sauce!

Bread sauce is a traditional accompaniment to game and poultry, popular since medieval times in fact! It’s famous for its delicious, creamy texture and complementary herb-tinged flavour –this recipe is sure to be popular.

Ingredients:

500 mlwhole milk
2 sprigs of thyme
Fresh black pepper
1 onion
25g salted butter
125g fresh white breadcrumbs

Preparation:

Step 1 – Simmer 500ml of whole milk with two sprigs of thyme, black pepper and an onion for five minutes.

Step 2 – Remove from the heat and leave covered for 20 minutes.

Step 3 – Strain the milk and return to the head. Add 25g salted butter, 125g of fresh white breadcrumbs and salt to taste. Cook, stirring, until smooth.
